The Frenchie Boutique Hotel has 14 rooms with a max capacity of 36 guests. The onsite restaurant is a small, high-end dining establishment known for its exceptional cuisine and impeccable service. We pride ourselves on crafting a unique and memorable culinary journey for our guests, using locally sourced, seasonal ingredients. The Frenchie Restaurant is open to hotel guests and guests with a day pass only. We are not open to the public.
Job Overview:
We are seeking an experienced and passionate Head Chef & Restaurant Manager to lead our kitchen and oversee the overall management of our small but exclusive restaurant. This role requires a creative and skilled culinary expert with strong leadership abilities and business acumen. The ideal candidate will be responsible for menu development, kitchen operations, staff management oversight, and ensuring an outstanding dining experience for our guests.
Key Responsibilities:
Culinary Excellence: Develop and execute a seasonal menu that aligns with the restaurant’s vision and maintains the highest quality standards, with input from the owner.
Kitchen Operations: Oversee daily kitchen activities, ensuring efficiency, cleanliness, and adherence to food safety regulations with the help of sous chef/ assistant manager.
Staff Leadership: Oversee our sous chef/ assistant manager and front of house manager/ lead waiter to maintain a seamless dining experience.
Inventory & Cost Control: Manage food inventory, sourcing, and vendor relationships while maintaining cost efficiency without compromising quality. Conduct costing of menu items, ensuring prime cost goals are met.
Guest Experience: Collaborate with front-of-house manager and staff to ensure superior customer satisfaction and personalized dining experiences.
Business Management: Work with the hotel GM to monitor financial performance, set revenue goals, and implement strategies to drive profitability.
Event Coordination: Plan and execute special dining events, wine pairings, and private dinners to enhance the restaurant’s reputation.
Compliance & Safety: Ensure compliance with all health and safety regulations, maintaining a pristine kitchen environment.
Qualifications & Skills:
Proven experience as a Head Chef, Executive Chef, or in a similar role within a fine dining or high-end restaurant.
Strong background in menu development, culinary creativity, and execution of seasonal and farm-to-table cuisine.
Experience in restaurant management, including budgeting, scheduling, and operations.
Excellent leadership and team management skills with a passion for training and mentoring staff.
Strong business acumen with an understanding of financial management and profitability.
Exceptional communication and problem-solving abilities.
Ability to thrive in a fast-paced, high-pressure environment while maintaining attention to detail.
Formal culinary training or relevant certifications preferred.
